red skin potatoes and onion



  • 6 medium sized baby red skin potatoes
  • 1 medium vidalia onion
  • 1 clove elephant garlic
  • 3 tablespoons butter (i used the new smart balance 50/50 sticks)


slice potatoes with skin on and place on tinfoil. slice onion and dice garlic, and place pats of butter on top. finish with some freshly cracked sea salt and pepper and close up packet. grill on top shelf over medium heat about 30 minutes. if you want the potatoes to get browned a little bit, move them to the bottom shelf when you put your meat on. top with a dollop of low-fat sour cream if desired.
