nick’s cowboy caviar


  • 2 – 15 oz cans black-eyed peas, rinsed and drained
  • 1/2 cup chopped green onion
  • 1/2 cup chopped sweet red pepper
  • 4 cloves minced garlic
  • 4 tbsp canola oil
  • 4 tbsp apple cider vinegar
  • 4 fresh jalapeno peppers, seeded and finely chopped
  • 1/2 tsp cracked black pepper
  • 1/4 tsp ground sea salt


mix together and serve with tortilla chips. it is quite healthy and filling and tasty! kind of an alternative to salsa. we had green onions already from our garden this year and it was fun making a dish from something we grew ourselves.
