mozzarella toast with tomato & pesto



  • 1 loaf baguette bread
  • 4-6 campari tomatoes
  • 1 ball fresh mozzarella
  • fresh or jarred pesto
  • olive oil


preheat oven* to 400. slice the baguette into approx 3/8″ slices. place on baking stone or cookie sheet, and do a quick drizzle of olive oil over all. place a small slice of mozzarella on the bread, and bake at 400 for about 10 minutes, or until cheese has melted and is slightly bubbly. promptly place a slice of tomato on each piece, and a dollop of pesto over the top. 

*this is also excellent if you toast the bread on the grill instead of in the oven.
