Honey Bourbon Scallops with Roasted Broccoli and Bacon

  • 6 sea scallops
  • 1/2 cup American Honey Bourbon
  • 1/4 cup raw honey
  • 2-4 cups fresh broccoli
  • 4 strips thick cut bacon
  • 1.5 cups baby bellas
  • Olive oil
  • Sea salt & pepper

Score a tic-tac-toe pattern lightly on both sides of scallops. Marinate in American Honey bourbon and raw honey for about 30 mins to an hour. Pour yourself a couple fingers of bourbon to get you through the next several steps.

Place raw, cut broccoli in roasting pan. Drizzle with olive oil, freshly cracked sea salt & pepper, toss. Cut 2 of the slices of uncooked bacon into 1″ pieces and spread over broccoli. Bake at 400 about 20-30 mins.

Cut the remaining 2 slices of bacon into 1/2″-1″ pieces and pan fry. Toss in mushrooms. When it is just cooked, add the liquid from the marinade and reduce by about half until it is nice and carmelized. Scooch mushrooms & bacon to the edges of the pan and add scallops – cook about 3-4 mins on each side.

Place scallops on plate next to broccoli and put a nice pile of the carmelized bacon & mushrooms right in between them.

Serves 2 people.

Each serving is approx 381 calories, 18g fat and 41 carbs. Each additional ounce of bourbon is 40 calories and 2 carbs.
