- 2-4 boneless skinless chicken breasts
- 4 cups chicken broth
- 4 cups beef broth
- 2 cans black beans (with jalepenos if you like)
- 1 cup minute rice
- 1/4 cup taco seasoning
- 1 cup chopped green onion
- hot sauce & cayenne pepper to taste
cube chicken breast and brown in skillet. i usually add some cayenne and hot sauce while it’s cooking.
combine remaining ingredients in large pot, add chicken. simmer over medium heat, stirring occasionally, until rice is cooked. it does not have to be minute rice, that just happens to be what i had, and it cooks quicker. i use chicken and beef broth because the beef broth gives a little extra flavor.
garnish with a dollop of fat free sour cream, a pinch of cheese, and a small handful of crunched tortilla chips.
this is one of those soups that you really have to keep tasting as you go. ingredients are versatile, and can be increased, omitted and added to. there are so many options. i have added corn to this soup, as well as stewed tomatoes and salsa, black olives… the list goes on. just experiment!
