- 1/2 head cauliflower, chopped
- 2 jalapenos, sliced
- 1/4 cup manchego cheese, shredded
- freshly cracked sea salt & pepper
- olive oil cooking spray
place cauliflower and jalapeno on top of foil. top with salt and pepper, and spray with olive oil cooking spray. seal the foil pack, and cook on the top shelf of the grill over medium heat 20-25 minutes.
divide shredded manchego over the top before serving. (you could use any cheese you want for this – what i love about manchego is that it’s basically a sharp white cheddar, but it’s harder than cheddar and the texture of it is similar to block parmesan. fabulous!)
