grilled jalapeno poppers

 

 

  • 2 jalapenos
  • 2 wedges laughing cow light french onion cheese
  • 2 tbsp shredded colby 
  • 2 tbsp soft horseradish cheese

 

slice jalapenos and remove seeds. cream together cheeses with a fork and stuff into jalapenos. (i used my fingers, it’s easier!) you could easily switch out the flavors of the cheeses – regular laughing cow light swiss would be great, and cheddar makes everything better! if you don’t have soft horseradish cheese, i would maybe double the shredded cheese and add 1/2 teaspoon of prepared horseradish just for the extra kick.

i made a little foil tray without a top and grilled these on the bottom shelf for about 20 minutes over medium heat. i was worried the cheese would run out, or i would have placed them directly on the grill. that doesn’t appear to be a problem, so you could probably do it.

these were made as an appetizer. this way, i could prepare the rest of the meal while the poppers were cooking and place the foil pack of veggies on the grill just as these came off. we ate the apps, gave it a few minutes and then put the steaks on.
