build your own radish sandwiches

 

  • baguette
  • sliced fresh radishes
  • arugula
  • 1/2 stick butter (smart balance half & half)
  • fresh or dried dill, thyme, basil, and parsely

 

whip butter with herbs and spread on lightly toasted baguette slices. serve on platter with arugula and radishes sprinkled with a little sea salt. eat as sandwiches or just layer arugula and radishes on top of one slice of bread. it is very delicious. the peppery arugula and spicy radish with all the herbs is a very good combination. the radishes came from our garden also and it is usually hard to come up with different ways of eating radishes. i got this idea from the barefoot contessa and it really was a winner.
