i made a few modifications to this recipe from ideotrope.com and it was delish!
balsamic pasta salad
- 1 box penne pasta
- 3/4 cup balsamic vinegar
- 1/3+ cup olive oil
- 1 tablespoon dried basil (I’d use fresh if I had it)
- 1+ tablespoon minced garlic
- 1/2 cup capers (with some juice)
- 1/4 cup sundried tomatoes (packed in oil), diced
- 1/2 english cucumber, diced
- 1/4-1/2 cup shredded parmesean
cook pasta according to directions. (i always go for “al dente” when making pasta salad.)
combine balsamic, oil, basil and garlic and shake well. (i use the measure, mix & pour from pampered chef.)
pour over pasta, using a spatula to clear out remaining spices from the container. add veggies and cheese, mix, and leave in fridge at least six hours before serving. (add a tad more balsamic and/or oil as needed.)
