portabella gouda turkey burgers
with fruity salad and sweet potato fries
for the burgers:
- 1 lb ground turkey (I used half white and half dark because they sold them separately)
- 2 cups small dice portabella mushrooms (about 2 med tops)
- 1 cup finely diced sweet onion (1/4 large onion)
- 1 cup shredded gouda
- 2 teaspoons dried sage (this is an estimate. I used fresh sage I dried myself probably more than 2 tsp)
combine all ingredients in large bowl. mix by hand until combined. makes 6 patties (depending on how you make them). grill until done.
i top the burgers with tomato, lettuce, dijon mustard and lemon mayo (light mayo with a squeeze of lemon juice)
fruity salad with lime yogurt dressing
basically, any ripe sweet fruit with crunchy lettuce or spinach.
ours was romaine, strawberry, plum, and grapes.
dressing: (this was plenty for two side salads)
- 2 tbs. non-fat vanilla yogurt
- 1 tbs. rose’s lime juice
sweet potato fries
pre-heat oven to 450. cut one sweet potato into 1/4 inch strips (as even as possible…which is not possible as far as I am concerned). in a bowl, coat with oil (1-2 tbs). spread fries on a heavy baking sheet, spaced evenly. cook 20-30 minutes depending on thickness, turning once half-way thru cooking time when fries start to brown on bottom.
