- 4 slices yogurt whole wheat bread (recipe here)
- part skim shredded mozzarella cheese
- fresh mushrooms*
- kalmata olives*
- fresh sliced tomato*
- vidalia onions, carmelized*
- 1 clove elephant garlic*
- shredded parmesan
sauce:
- 1 can tomato paste + 1 can water
- 2-3 tbsp. basil
- 2-3 tbsp. oregano
- 2 tbsp. olive oil
*you can use whatever toppings you like. but this is how jason made it, and it was awesome.
preheat oven to 400.
thinly slice onion and dice garlic. place in a small skillet with 2 tbsp. butter or olive oil and cook over medium high heat until brown. (we like it to be a little crispy in some places.)
while the onion and the garlic are cooking, put together sauce. for best results, use hot water. mix well.
brush undersides of bread with olive oil (or melted butter) and place oiled side down on pizza stone or cookie sheet.
when the onions are just about cooked, toss some mushrooms in the pan to get them moistened up. cook to desired tenderness. i think jason just put them in for a few minutes.
spoon a few tablespoons of sauce over each piece of bread. top with mozzarella cheese and desired toppings.
cook about 10-15 minutes, or until cheese is melted and bubbly.
when it comes out of the oven, top with a little shredded parmesan.
