A great looking recipe from Sarah:
Got this recipe from “Cooking Light” and yes, I was kind enough to be the guinea pig. Poor me I had to eat this delicous cake. It was a hit with Nick also. It is surprising how rich and moist it really is and there is no oil or butter in the actual cake. I doctored the recipe a little and used two chunked apples along with applesauce. The original recipe called for chunky applesauce. I also had whole wheat flour.
- 1 cup quick-cooking oats.
- 1 cup hot water
- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 2 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1/2 tsp salt
- 11/3 cups packed light brown sugar
- 3/4 cups applesauce
- 2 apples peeled and chopped
- 1/3 cup honey
- 2 large egg
- cooking spray
Mix oats in hot water and set aside.
Preheat oven to 350. Mix other dry ingredients in small bowl and set aside. In a larger mixing bowl combine sugar, honey, and egg and beat on high for 1 minute. Fold in apples. Add oat mixture and beat at low speed until well blended. Add dry ingredients slowly to sugar mixture and beat well. Bake in a 9×9 sqare pan coated with cooking spray for 45-50 minutes or until toothpick clean.
For Frosting:
- 3 tbsp smart balance butter melted
- 1/4 cup brown sugar
- 3 tbsp honey
- 1/3 cup slivered almonds
- 1 tsp vanilla or almond extract
Melt together and pour over cooked cake. Broil for 1 more minute (be careful to not burn the almonds!) Let cool and serve with cool whip light sprinkled with cinnamon.
